Vincent: Fish pie
FISH pie makes a great family comfort dish, especially when you snuggle around the fire with some rustic crusty bread.
I love the mix of plain and smoked fish in this recipe and there are plenty of variations you can make to change the mix and the final result.
Even in a small household it's worth preparing this entire recipe quantity and dividing the mixture between small ramekins and freezing some for a meal on another day.
By recycling the liquid content through the various stages, the finished result is a wonderful fish flavour throughout the entire dish.
FISH PIE 3 cups milk 1 small leek (white part only), chopped 1 small onion, chopped 1/2 rib celery, chopped 3 large sprigs parsley 1 tbspn chopped parsley 6 black peppercorns 1 bay leaf 700g firm fish fillets (I used ling; flathead will work, too), skin removed, any small bones removed, cut into 4cm pieces 225g smoked cod fillets, cut into 3cm pieces 1kg potatoes, peeled and quartered Salt 170g butter 1/2 cup cream Freshly ground white pepper 1/3 cup plain flour 1 tspn prepared hot English mustard 3/4 cup grated cheddar cheesePut the milk, leeks, onions, celery, parsley sprigs, peppercorns and bay leaf into a medium saucepan and bring to a boil over medium-high heat.
Remove from the heat, cover, and let infuse for 20 minutes.
Strain the milk, discarding the solids, and return the milk to the saucepan.
Add the two types of fish pieces, cover and bring to a simmer over medium heat.
Simmer carefully until cooked through, 7-8 minutes. Strain, reserving the milk. Transfer the fish to a bowl and cover.
Meanwhile, cook the potatoes in a large saucepan of salted boiling water over medium heat until tender.
Drain the potatoes, return to the saucepan and set aside to let dry out for about 20 minutes.
Add 110g of the butter, the cream and salt and pepper to taste and mash coarsely. Cover the saucepan and set aside.
Preheat oven to 200C. Melt the remaining butter in a medium pot over medium heat.
Add the flour and stir with a wooden spoon until slightly dried out, but not golden, about 4 minutes.
Remove the saucepan from the heat and gradually add the reserved milk, whisking constantly, until smooth.
Return the saucepan to the heat, add the mustard, the chopped parsley and salt and pepper to taste.
Cook, stirring, until thickened, about 5-7 minutes.
You need to finish with a smooth sauce that is still able to be poured.
