Satay, caesar light, tasty seasonal favourites

With barbecue season in full swing, I like to lighten up the menu by choosing recipes that can be pre-prepared as much as possible and are lighter on calories but loaded with flavour.

Both the caesar salad (with a twist, of course) and pork satay fit the bill.

There’s nothing like a great, crunchy and cheesy caesar salad, and making one is as simple as having the best, freshest ingredients possible. Crisp greens are the base and have got to be good, as well as the Parmesan cheese. Buy a small piece and grate it yourself on a fairly coarse grater. The flavour is far superior to the dried, pre-grated kind, and the coarser size of the shaved cheese adds excellent texture to the dressing.

This recipe calls for homemade croutons, which again takes the flavour up a notch. They’re easy, and if you make extras, you can keep them for a day or two to use them to top soup or other lunch salads through the week.

The pork satay (or chicken or beef) is a favourite with the family and often first choice for a light dinner or appetizers. Both the satay and the sauce take only minutes to put together.

The meat does, however, need to marinate for at least an hour, and the sauce is best made ahead then left to stand so the flavours can blend. Both need to be brought to room temperature before using.

If you’re serving the satay for dinner, use three or four pieces of pork per skewer, and if you’re doing appetizers, one or two pieces. Any leftovers make great pita pockets or tortilla fillers for lunches; just combine them with shredded lettuce, cucumber and maybe a crumble of feta.

Easy Recipe For Caesar Salad Dressing And Caesar Salad

Preheat oven to 350 degrees.  Brush sliced bread with olive oil and bake until golden brown, turning once. Remove from the oven and brush slices with roasted garlic. Break apart or cube – remove the crusts if desired. Store in airtight containers or storage bags for 6 weeks or freeze for longer storage.  Sprinkle dried herbs like oregano, basil, rosemary or thyme on slices after brushing with olive oil for a more flavorful crouton.
